Taking the oven out of the equation can always be appreciated. A quick and easy snack, this recipe for vegan rum balls will taste better the longer they sit. No-bake recipes are a hit, especially when turning on the oven and heating your kitchen is the last thing you want to do.
Here is a recipe for vegan rum balls:
Ingredients
¾ cup Walnuts
7 soft, large Medjool Dates
3 – 4tbspDark Rum
2 tbspCacao Powder (plus extra for rolling)
1 tbspAlmond Butter
1 tbspMaple Syrup
1 tbspStrong Brewed Coffee
¼ cup Dark Chocolate
Pinch of Sea Salt
Directions
Place the dark chocolate in a bowl and put it on top of a pot filled with simmering water. Let the chocolate melt, about 5 – 8 minutes.
Place the walnuts in a food processor and pulse until it becomes a fine meal. Add the rest of the ingredients and process until it is thoroughly mixed and starts to stick together.
Remove the mixture and pack it into a large ball. Divide the mixture into 10 pieces. Roll each piece into a smooth ball.
Once all of the balls are rolled, fill a bowl with a few tablespoons of cacao powder and toss to coat.
Place into the fridge and let sit for 20 – 30 minutes. Store in an airtight container in the refrigerator for 4-5 days or freeze for up to 3 months.
